Ingredients:
- 4 hard-boiled eggs (chopped)
- 1 ripe avocado (mashed)
- 1 cup spinach (chopped)
- ¼ cup red onion & celery (finely chopped)
- ¼ cup cherry tomatoes (optional)
Dressing:
- 2 tbsp Greek yogurt or mayo
- 1 tsp Dijon mustard & lemon juice
- ½ tsp garlic powder, salt, black pepper
- ¼ tsp paprika (optional)
Instructions:
