Avocado & Spinach Egg Salad 🥑🥚🌿

This Avocado and Spinach Egg Salad is a creamy, healthy, and protein-packed dish that’s perfect for breakfast, lunch, or a light dinner. It’s a delicious twist on the classic egg salad with the addition of creamy avocado and fresh spinach

Ingredients:

  • 4 hard-boiled eggs (chopped)
  • 1 ripe avocado (mashed)
  • 1 cup spinach (chopped)
  • ¼ cup red onion & celery (finely chopped)
  • ¼ cup cherry tomatoes (optional)

Dressing:

  • 2 tbsp Greek yogurt or mayo
  • 1 tsp Dijon mustard & lemon juice
  • ½ tsp garlic powder, salt, black pepper
  • ¼ tsp paprika (optional)

Instructions:

  1. Mash avocado in a bowl.
  2. Add chopped eggs, spinach, onion, celery, and tomatoes.
  3. Mix dressing ingredients separately, then combine with salad.
  4. Serve on toast, in a wrap, or as is.
